So in One Piece, Sanji is a cook who finds immense joy in feeding people, even if they have nothing to pay in return. He just cannot turn away someone who genuinely needs food but cannot afford it. For what it is worth, his biggest dream is to find the All Blue, a place where all four oceans in One Piece meet, and one can find fish from all over the world there.
All this ties up to his motivations and commitment to being the best chef in the world. And for a chef, it is a sacred rule that they protect their hands from any harm and use them only for cooking and feeding people. This is what Sanji lives by, and this is what Zeff (a father-figure and a mentor in Sanji’s life) has taught him from the very beginning.
Since Sanji’s passion for cooking forbids him from using his hands in combat, as a fix, he uses his legs to fight off bad guys. Zeff taught Sanji a martial art called the Black Leg Style, which appears to blend combat techniques from numerous martial arts, including Taekwondo and Capoeira, in order to improve his kicking abilities.

But this is not the only principle he adheres to while fighting; there is one more that might be more important than his life itself.
The other fighting rule for Sanji
It might not be really fleshed out in season 1 of One Piece Live Adaptation, but manga and anime fans know that he is the epitome of chivalry. One of the other important things that Zeff deeply ingrained in Sanji is that he should never hit a lady, no matter what situation he finds himself in.
Sanji has never and will never fight a female character, even if his life depends on it. He sometimes gets some flak for his inability to stand up to female antagonists in the series, but at the end of the day, people realise how Sanji is built as a character, and they even respect that about him. In actuality, he doesn't even consciously choose to follow the not-fighting rule - it is just who he is.
